In a 10-inch pie plate 2 inches deep, lightly coated with cooking spray or oil, arrange half of the potato slices. Season with salt and pepper. Sprinkle blue cheese evenly over potatoes. Add remaining potato slices and season with salt and pepper again. Pour broth around the edge. Cover tightly with aluminum foil and bake until potatoes are tender, about 35 minutes.
