New Potato and Blue-Cheese Pie

6 new potatoes -- unpeeled,sliced

salt and freshly ground pepper to taste

1/2 cup crumbled blue cheese

1/2 cup vegetable broth

 

Preheat oven to 350F. In a 10-inch pie plate 2 inches deep, lightly coated with

cooking spray or oil, arrange half of the potato slices. Season with salt and

pepper. Sprinkle blue cheese evenly over potatoes. Add remaining potato slices

and season with salt and pepper again. Pour broth around the edge.

Cover tightly with aluminum foil and bake until potatoes are tender, about 35

minutes. Remove foil and bake until potatoes are lightly browned, about 10

minutes longer.
