Lasagna Roll-Ups 2

1 10 oz package frozen chopped spinach -- thawed and squeezed dry

2 tablespoons minced green onions

2 teaspoons corn oil

2 cups Tofu Ricotta Cheez

1/4 cup Parmesan Cheez

5 1/2 cups Tomato Sauce 1

1/2 teaspoon sea salt

1 N'egg

12 lasagna noodles -- cooked and drained

1/2 cup water

2 cups Notzarella Cheez

 

Cook the spinach and onions in the oil until tender, stirring frequently.

Remove from heat and stir in the Cheezes, 1 1/2 cups of the Tomato Sauce, salt,

and N'egg. Put the noodles in a single layer on waxed paper. Spread some of

the Cheez mixture on each noodle and roo up each one jelly-roll fashion.

Combine the Tomato Sauce and water and put about 3/4 of it into a casserole.

Arrange the rolled-up noodles, seam side down, in the sauce. Top with the

Notzarella and rest of the sauce. Cover loosely with foil. Bake at 375F for 30

minutes or until hot and bubbly.
