Guest guest Posted February 9, 2000 Report Share Posted February 9, 2000 * Exported from MasterCook * Fava Beans with Pesto Sauce Recipe By :Vegetarian Times Cooks Mediterranean Serving Size : 6 Preparation Time :0:00 Categories : Veg Times Cooks Mediterranean Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups fresh basil 1/4 cup walnuts 1/4 cup freshly grated Parmesan cheese 3 tablespoons olive oil 2 cloves garlic salt & freshly ground pepper to taste 3 15 oz cans fava beans -- rinsed & drained 6 lettuce leaves 2 scallions -- (to 4) trimmed & thinly sliced tomato wedges and/or red bell pepper rings for garnish -- (optional) In a blender or food processor, process the basil until finely chopped. Add the walnuts, Parmesan cheese, olive oil, and garlic and process until smooth. Season with salt and pepper. In a small bowl, mix the pesto with the fava beans. On a platter or individual salad plates, arrange the lettuce leaves. Mound the pesto-bean mixture on top of the lettuce leaves. Scatter the scallions over the tops. Garnish with tomato wedges and/or bell pepper rings if desired. Serve at room temperature.
