I may have posted some of these in the past, but we have lots of new members, so I thought they were worth " re-running " . * Exported from MasterCook * Tofu Ricotta Recipe By :The Uncheese Cookbook Serving Size : 16 Preparation Time :0:00 Categories : The Uncheese Cookbook Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds firm regular tofu -- well mashed 1/4 cup fresh lemon juice 2 teaspoons dried basil leaves 1/2 teaspoon sweetener of choice -- (to 1/2 tsp) 3/4 teaspoon salt 1/2 teaspoon garlic granules Mash all the ingredients together until the mixture has a fine, grainy texture like ricotta cheese.
