Fresh Bean Salad with Parsley - Buttermilk Dressing

Amount Measure Ingredient -- Preparation Method

6 tbsps buttermilk

2 tbsps lowfat mayonnaise

1 tbsp white wine vinegar

1/2 tsp salt

pepper to taste

1/2 c Italian parsley -- minced

1/4 c red onion -- minced

2 1/2 c green beans -- cooked and chilled

2 1/2 c wax beans -- cooked and chilled

 

To make the dressing, combine all ingredients except beans in a blender or

food processor. Pour dressing over beans and serve at once.
