Vegetables and Noodles with Good Creamy Sauce

8 ounces mushrooms -- sliced

1 zucchini -- unpeeled, sliced

1 clove garlic -- minced

1/2 cup vegetable broth

1 tablespoon dry white wine (optional)

1/4 teaspoon dried thyme

1/4 teaspoon salt

freshly ground pepper to taste

4 ounces egg noodles (about 2 1/2 cups) -- cooked and drained

Good Creamy Low-Fat Sauce (recipe will

follow)

3 tablespoons freshly grated Parmesan cheese

 

Preheat oven to 375F. In a medium pan over medium heat, place mushrooms,

zucchini, garlic, broth, wine, and seasonings. Bring to a boil, reduce heat,

and simmer, covered, until vegetables are tender-crisp, about 5 minutes.

Transfer to a 2 1/2-quart casserole dish lightly coated with cooking spray or

oil. Stir in noodles and sauce. Sprinkle with Parmesan cheese.

Bake, uncovered, until bubbly, about 30 minutes.
