Garden Gazpacho

Amount Measure Ingredient -- Preparation Method

4 ripe plum tomatoes -- seeded & chopped

1 small onion -- diced

1 green or red bell pepper -- diced

1 cucumber -- peeled & chopped

1 small jalapeno

OR serrano pepper -- seeded & minced

2 cloves garlic -- minced

2 tablespoons minced fresh basil

1 1/2 teaspoons ground cumin

1/2 teaspoon hot pepper sauce -- or to taste

1/4 teaspoon salt

1/4 teaspoon black pepper

2 cups canned tomato juice

croutons for serving -- (optional)

 

Place all the ingredients except the tomato juice and croutons in a food

processor fitted with a steel blade. Process for 10 to 15 seconds,

forming a mash. Transfer to a large bowl. Blend in the tomato juice.

Chill for at least 1 hour before serving. Serve with croutons, if

desired.
