Guest guest Posted February 12, 2000 Report Share Posted February 12, 2000 * Exported from MasterCook * Garlicky Greens Saute Recipe By :Vegetarian Times Cooks Mediterranean Serving Size : 4 Preparation Time :0:00 Categories : Veg Times Cooks Mediterranean Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 1 large onion -- minced 5 cloves garlic -- minced 1/4 cup sherry OR white wine -- (optional) 1/4 cup dried oregano 1/4 teaspoon dried basil salt and freshly ground pepper to taste 8 cups dark leafy greens (spinach, chard, beet greens, etc.) 1/4 cup freshly grated Parmesan cheese -- (to 1/2 cup) In a large, deep skillet, heat the olive oil over medium-high heat. Add the onion and garlic and cook, stirring, until softened, about 5 minutes. Add the sherry or white wine if desired, the oregano, basil, and salt & pepper. Stir well. Add the mixed greens to the skillet, pressing them down with the back of a spoon as they begin to wilt. Cook, stirring, until the greens are completely wilted, about 10 minutes. Transfer the greens to a serving dish, sprinkle with Parmesan cheese, and serve.
