Greek-Style Tofu Salad

Amount Measure Ingredient -- Preparation Method

1/4 cup red wine vinegar

2 tablespoons olive oil

1 tablespoon sliced fresh basil leaves

1 teaspoon kosher or regular salt

1/2 teaspoon freshly ground black pepper

1/2 teaspoon dried oregano

1 pound extra-firm tofu -- drained & cut into 1/2 " cubes

2 medium cucumbers -- peeled & sliced

1 small red onion -- thinly sliced

1 cup black olives -- (good quality) pitted

1/4 cup crumbed feta cheese

 

In a large bowl, combine the vinegar, olive oil, basil, salt, pepper,

and oregano and whisk until slightly thick. Add the tofu cubes and

marinate for 1 hour, stirring occasionally.

 

Add all the remaining ingredients, toss lightly, and serve.
