I decided to make pasta for dinner but what was special about the meal

was the side dish - roasted brussel sprouts. I know, I know, yuck,

brussel sprouts. But no! Try them this way and you'll see - so good.

Really a nice change. They are delicious this way. No more mushy brussel

sprouts. I promise.

Roasted Brussel Sprouts

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 1/2 lb brussel sprouts

3 tbsp good olive oil

kosher salt

1/2 tsp freshly ground black pepper

 

Preheat the oven to 400°F.

 

Wash the brussel sprouts and cut off the ends. Pull off any yellow

outer leaves. Mix them in a bowl with the olive oil, salt and pepper.

Turn them out on a baking sheet and roast for 35-40 minutes, until crisp

outside and tender inside. Shake the pan from time to time, to brown the

brussel sprouts evenly. Sprinkle with more kosher salt and serve.
