Hot Vegetable Hero

Amount Measure Ingredient -- Preparation Method

1 8-ounce loaf French or Italian bread -- unsliced

1 tablespoon olive oil

1 large yellow onion -- sliced thin

2 medium carrots -- peeled and sliced thin

1/2 medium red bell pepper -- cored, seeded, and sliced thin

1 medium zucchini -- sliced thin

1 8-ounce can low-sodium tomato sauce

3/4 teaspoon dried oregano

1/4 teaspoon black pepper

1/4 pound sliced low-sodium Muenster cheese

 

1. Preheat the broiler. Slice the bread in half lengthwise and scoop out and

discard the soft center. Place the halves, cut side up, on a baking sheet and

broil 4 inches from the heat for 1 minute or until lightly toasted. Set aside.

2. In a heavy 10-inch skillet, heat the olive oil over moderate heat for 1

minute; add the onion and cook, uncovered, for 5 minutes or until soft. Stir

in the carrots, red bell pepper, and zucchini, and cook, covered, for 8 to 10

minutes or until the carrots are tender. Add the tomato sauce, oregano, and

black pepper, and simmer, uncovered, for 2 minutes.

3. Spoon the vegetable mixture into the bottom half of the bread, top with

the cheese, and place in a broiler 4 inches from the heat. Broil for 1 minute

or until the cheese has melted. Transfer to a cutting board and top with the

toasted upper half. Cut into 4 sandwiches.
