In a large heavy saucepan, heat the olive oil over moderate heat for 1 minute; add the onion and cook, uncovered, until soft--about 5 minutes. 2. Mix in the garlic, potatoes, and water; cover, raise the heat to moderately high, and bring to a boil--about 4 minutes. Adjust the heat so that the mixture bubbles gently and cook, uncovered, for 20 minutes or until tender. 3. Using a potato masher, carefully mash the potatoes right in the saucepan. Mix in the kale and pepper, cover, and simmer for 15 minutes or until the kale is just tender.
