Guest guest Posted February 14, 2000 Report Share Posted February 14, 2000 Recipe for Crispy Garlic in Oil will follow. * Exported from MasterCook * Clear Soup with Spinach and Tofu Recipe By :Real Vegetarian Thai - Nancie McDermott Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups vegetable stock 8 ounces firm tofu -- cut into 1-inch chunks 1/2 teaspoon freshly ground pepper 1/2 teaspoon soy sauce 1/4 teaspoon sugar A handful of small spinach leaves -- stemmed and left whole,or large leaves torn into big bite-sized pieces 3 green onions -- thinly sliced crosswise salt to taste 2 tablespoons Crispy Garlic in Oil This is the classic gaeng jeute, or " plain soup. " Despite the usual Thai affection for over-the-top flavors, a bland soup is often welcomed as a soothing foil to the appealing cacophony of seasonings found in a tradiitional Thai meal. In upcountry kitchens, Thai families keep alive the Chinese culinary legacy of serving souop as the sole beverage accompanying each meal. While many city-dwelling Thais have taken up the Western practice of sipping a cool beverage throughout the meal, the love of soup remains, and the question that arises when putting a Thai menu together is not whether to serve soup, but which soup to serve. Choose this one when you want satisfaction, simple and swift. Serve with rice and pass a little hot sauce around if your guests crave a little drama. In a saucepan, bring the stock to a gentle boil over medium heat. Add the tofu, pepper, soy sauce, and sugar and simmer until the tofu is heated through, about 2 minutes. Stir in the spinach and green onions and remove from the heat. Taste and add a little salt, if you like.
