Baby Lima Beans with Sour Cream and Paprika

Amount Measure Ingredient -- Preparation Method

2 cups fresh baby lima beans -- (about 2 pounds, unshelled)

(or one 10-ounce package frozen baby lima

beans)

1 tablespoon unsalted margarine

1/8 teaspoon salt

1/8 teaspoon black pepper

3 tablespoons sour cream

2 tablespoons plain low-fat yogurt

2 tablespoons minced parsley

1 teaspoon paprika

 

1. In a large saucepan, bring an inch of unsalted water to a boil; add the

lima beans and cook, covered, over moderate heat for 12 minutes or until

tender. Drain.

2. Stir in the margarine, salt, pepper, sour cream, yogurt, parsley, and

paprika.
