Brown Rice Veggie Stir-Fry

Amount Measure Ingredient -- Preparation Method

2 tablespoons water

2 tablespoons light soy sauce

1 tablespoon olive or vegetable oil

1 cup sliced zucchini

1 cup shredded cabbage

1/2 cup sliced mushrooms

1/2 cup chopped onion

1 cup cooked brown rice

1/4 cup diced fresh tomato

1/4 cup grated carrot

2 tablespoons slivered almonds -- optional

 

In a skillet, combine water, soy sauce, and oil; add zucchini, cabbage,

mushrooms, and onion. Stir-fry for 4 - 5 minutes or until vegetables are

crisp-tender. Add rice, tomato, and carrot. Stir-fry for 2 - 3 minutes or

until heated through. Sprinkle with almonds if desired.
