Guest guest Posted February 16, 2000 Report Share Posted February 16, 2000 * Exported from MasterCook * Herbed Orzo with Basil Recipe By :The Meatless Gourmet Easy Lowfat Favorites, Bobbie Hinman Serving Size : 6 Preparation Time :0:00 Categories : The Meatless Gourmet Easy Lowf Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons vegetable oil 1 cup finely chopped onion 2 cloves garlic -- crushed 2 cups vegetable broth 2 tablespoons soy sauce -- (reduced sodium or regular) 1 teaspoon dried basil 1/16 teaspoon pepper 1 cup orzo -- uncooked Heat oil in a medium saucepan over medium heat. Add onion and garlic. Cook, stirring frequently, until onion is tender, about 4 minutes. Add small amounts of water as necessary, about a tablespoon at a time to prevent sticking. Add remaining ingredients, except orzo. Bring mixture to a boil, then stir in orzo. Cover, reduce heat to medium low, and cook 15 minutes, until the liquid has been absorbed.
