Banana Tofu Cream Pie

2 or 3 ripe bananas

2 teaspoons pure vanilla

1 tablespoon lemon juice

1/2 cup oil

1 cup sugar

1/4 teaspoon salt

2 1/2 cups firm tofu

 

Blend first 6 ingredients in blender in order given, until creamy and smooth.

Use a rubber scraper to help blend in the tofu.

Pour the thick creamy blend into a prebaked pie shell and chill for 2 to 3

hours. Before serviing, slice another banana in rounds and decorate the top of

the pie.
