-- 1 1/2 LB LOAF--

1 1/3 cups water

1/4 cup unsweetened applesauce

1/4 cup molasses

1 teaspoon salt

3/4 teaspoon cinnamon

3/4 teaspoon ginger

1/4 teaspoon ground cloves

1/3 cup wheat germ

1/3 cup cornmeal

2/3 cup whole wheat flour

2/3 cup oatmeal

2 cups bread flour

3 tablespoons nonfat dry milk powder

2 1/2 teaspoons yeast

3/4 cup cranberries

 

Bake according to manufacturer's instructions, adding the cranberries during the

raisin bread cycle, or five minutes before the final kneading is finished.

 

Makes 12 thick slices.

 

NOTES: Bursting with tart cranberries, this satisfying bread is very beautiful

when sliced - deep red fruit against a rich brown crumb.
