Guest guest Posted February 17, 2000 Report Share Posted February 17, 2000 Posted by: Carla * Exported from MasterCook * Pasta with Peppers and Broccoli Recipe By :Southern Living® 1991 Annual Recipes Serving Size : 6 Preparation Time :0:00 Categories : Broccoli Pasta Shells Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 7.5-ounce jar roasted peppers -- drained and cut into strips 2/3 cup pine nuts 1/2 cup olive oil 1/2 cup chopped fresh parsley 1 bunch fresh broccoli 1 12-ounce package small shell pasta 1 cup freshly grated Parmesan cheese 1/8 teaspoon pepper 1/8 teaspoon ground red pepper Combine first 4 ingredients in a skillet; cook over medium heat until nuts are golden brown, stirring often. Trim off large leaves of broccoli and remove tough ends of lower stalks. Wash broccoli thoroughly, and cut into flowerets. Set aside. Cook pasta according to package directions, adding broccoli the last 2 minutes; drain. Add roasted pepper mixture, cheese, and remaining ingredients. Toss and serve immediately.
