Here are two: Apple Bran Muffins Cranberry Oatmeal Muffins * Exported from MasterCook * Apple Bran Muffins Recipe By : Meatless Gourmet: Easy Lowfat Favorites, Hinman, p 271 Serving Size : 12 Preparation Time :0:00 Categories : Breads, Quick Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups bran (wheat bran-not the processed bran -- cereal) 1 cup all-purpose flour 2/3 cup whole wheat flour 2 1/4 teaspoons ground cinnamon 1 1/2 teaspoons baking soda 2 cups skim milk 4 teaspoons lemon juice 2 egg whites 1/4 cup molasses plus 2 tablespoons molasses 1 1/2 tablespoons vegetable oil 1 1/2 teaspoons vanilla extract 1 large sweet apple -- unpeeled, coarsely shredded -- (1 cup) Makes 12 muffins As moist as a muffin can be, these high-fiber treats make an ideal, nutrition- packed treat. They're sweet and " cinnamony " and freeze well, too, so you can always be just a toaster away from breakfast or dessert. Preheat oven to 375F. Lightly oil 12 muffin cups or spray with a nonstick cooking spray. In a large bowl, combine bran, both types of flour, cinnamon, and baking soda. Mix well. In a medium bowl, combine milk and lemon juice. Let stand 1 minute. Add remaining ingredients, except apple. Beat with a fork or wire whisk until blended. Stir in apple. Add to dry mixture, mixing until all ingredients are moistened. Divide mixture evenly into prepared muffin cups. Bake 20 to 25 minutes, until a toothpick inserted in the center of a muffin comes out clean. Remove muffins to a rack to cool. Serve-again hint: Split a muffin horizontally and spread with peanut butter and jelly for a delicious sandwich that makes a unique breakfast or lunchtime treat. Each bite is dotted with juicy little pockets of cranberry sauce. Preheat oven to 400F. Lightly oil 12 muffin cups or spray with a nonstick cooking spray. In a large howl, combine oats, both types of flour, baking powder, baking soda, and cinnamon. Mix well. In another bowl, combine remaining ingredients. Beat with a fork or wire whisk until blended. Break up any large clumps of cranberry sauce (don't worry about the smaller ones-they will form the nice little pockets of flavor). Add to dry mixture, mixing until all ingredients are moistened. Divide mixture evenly into prepared muffin cups. Bake 18 to 20 minutes, until a toothpick inserted in the center of a muffin comes out clean. Remove muffins to a wire rack. Serve warm for best flavor.
