Toasted Almond Tofu Burgers

12 oz firm tofu -- cut in 1 " slices

nonstick spray

1/2 cup grated carrots

1/2 cup thinly sliced scallions

2 tsp minced peeled ginger

1 clove garlic -- minced

1/2 cup finely chopped toasted almonds

1 large egg white -- beaten to blend

4 tsp soy sauce

1 tsp Asian sesame oil

1 tsp toasted sesame seeds

4 sesame buns

4 slices tomato

1 cup alfalfa sprouts

 

Drain and pat dry the tofu. Wrap in a doubled dish towel. Place on the work

surface. Weigh down with a board topped with food cans or weights for 1 hour.

Squeeze the towel wrapped tofu to extract as much liuid as possible. Transfer

tofu to a medium bowl. Using a fork, mash into small pieces.

 

Spray a medium skillet with nonstick spray and place over medium heat. Add the

carrot, scallions, ginger and garlic; saute until slightly softened. Cool. Mix

the carrot mixture, almonds, egg white, soy sauce, sesame oil and sesame seeds

into the tofu. Season with salt and pepper. Shape into four 1/2 inch thick

patties. (Can be made 4 hours ahead - cover and chill.)

 

If grilling, spray the grill rack with nonstick spray and heat the grill to

medium. If sauteeing, spray a large nonstick skillet with nonstick spray and

heat over medium heat. Lightly spray the patties on both sides with nonstick

spray. Place patties on the grill or in the skillet and cook until golden brown

and heated through - about 3 minutes per side.

 

Place 1 burger on each bun bottom. Top with a tomato slice, some sprouts and

bun top.
