Bean-Rice Burgers

Amount Measure Ingredient -- Preparation Method

1 cup sunflower seeds

2 tablespoons butter or margarine

2 tablespoons sliced green onions

1/4 cup finely minced celery

1 cup chopped cooked soy beans

1 cup cooked brown or wild rice

1/2 cup shredded Cheddar cheese

1/4 cup whole-wheat flour

2 teaspoons sweet pickle relish

2 tablespoons ketchup

2 teaspoons soy sauce

1/2 teaspoon crumbled fresh basil leaves

2 large eggs -- lightly beaten

Salt and pepper

Sliced onion rings -- for garnish

Pickle slices -- for garnish

 

1. In the container of a blender, process the sunflower seeds on high until

finely ground.

2. In a large skillet, melt the butter over medium-low heat and cook the

onions and celery for 2 or 3 minutes until the onions begin to soften. Add

the beans, rice, ground sunflower seeds, cheese, flour, relish, ketchup, soy

sauce, basil, and eggs and season with salt and pepper. Stir well and cook

for 2 or 3 minutes until heated through. Transfer to a bowl or plate.

3. Using an ice cream scoop, drop balls of the mixture into the skillet,

flattening with a pancake turner to a thickness of 1/4 inch. Cook, turning

once, for 5 or 6 minutes, or until well browned. Transfer to a platter,

garnish with the onion rings and pickles and serve.
