Succotash Pie

Amount Measure Ingredient -- Preparation Method

1 prepared unbaked pastry shell

1 10-ounce package frozen kernel corn -- thawed

1 10-ounce package frozen baby lima beans -- thawed

1 cup grated Cheddar or Colby cheese

3 chopped green onions -- (green portions only)

3 large eggs

1 1/4 cups light cream or half-and-half

1/2 teaspoon crushed dried basil leaves

1/4 teaspoon crushed dried chervil

Salt and pepper

 

1. Position the rack in the center of the oven and preheat to 450 degrees.

Press the pastry into a 9-inch pie pan, prick the bottom of the pastry and

bake for about 10 minutes, or until the shell starts to harden. Do not let it

brown. Reduce the oven temperature to 350 degrees.

2. In a bowl, combine the corn, lima beans, cheese, and onion and toss to mix.

3. In another bowl, using an electric mixer on high speed, beat the eggs

until light colored. Add the cream and herbs, season with salt and pepper and

beat until foamy. Pour over the vegetables, stir gently and transfer to the

pastry shell. Bake for 30 to 35 minutes, or until firm and lightly browned.

Cool slightly and cut into wedges to serve.
