CREAMED CORN BREAD

1 cup yellow cornmeal

3/4 cup all-purpose flour

1 tablespoon sugar

1 tablespoon baking powder

1/2 teaspoon salt

3/4 cup skim milk

1/4 cup Egg Beaters® 99% egg substitute

2 tablespoons oil

8 3/4 ounces creamed corn -- 1 can

 

Combine first 5 ingredients. Stir in other ingredients until just moistened.

Place 9 " iron skillet in 450 degree oven for 5 min. Remove and spray with

cooking spray. Add cornbread mixture. Cook at 450 degrees for 27 minutes.

 

Makes 8 servings.
