Saute the millet in 2 tablespoons of the oil until it is beginning to brown. Cover with the boiling water and salt. Simmer for about 20 minutes. Saute the vegetables in 2 tablespoons of the oil until tender. In a separate saucepan, heat the remaining oil, add the flour and stir well. Slowly add the water, stirring constantly to avoid lumps. Add the soy sauce and bring to a boil. Simmer for 2 to 3 minutes. In a greased baking dish, place alternate layers of millet, vegetables, and sauce, ending with a layer of sauce. Sprinkle with the breadcrumbs. Bake at 350F for about 20 minutes until the top is lightly browned. Alternatively, cover with greaseproof paper and microwave for 6-7 minutes: finish by browning under a broiler. - - - - - - - - - - - - - - - - - - - Per serving: 455 Calories (kcal); 21g Total Fat; (40% calories from fat); 12g Protein; 58g Carbohydrate; 0mg Cholesterol; 4145mg Sodium Food Exchanges: 3 Grain(Starch); 0 Lean Meat; 3 Vegetable; 0 Fruit; 4 Fat; 0 Other Carbohydrates Nutr.
