Millet Casserole

2 onions

2 carrots

1 small cabbage

1 cup millet

1/3 cup vegetable oil

3 3/4 cups boiling water

sea salt, as needed

1/4 cup whole wheat flour

1 1/3 cups water

1 to 2 tablespoons soy sauce

1/2 cup wholewheat bread crumbs

 

Chop the onions, cut the carrots into slivers and shred the cabbage.

Saute the millet in 2 tablespoons of the oil until it is beginning to brown.

Cover with the boiling water and salt. Simmer for about 20 minutes.

Saute the vegetables in 2 tablespoons of the oil until tender.

In a separate saucepan, heat the remaining oil, add the flour and stir well.

Slowly add the water, stirring constantly to avoid lumps. Add the soy sauce and

bring to a boil. Simmer for 2 to 3 minutes.

In a greased baking dish, place alternate layers of millet, vegetables, and

sauce, ending with a layer of sauce. Sprinkle with the breadcrumbs.

Bake at 350F for about 20 minutes until the top is lightly browned.

Alternatively, cover with greaseproof paper and microwave for 6-7 minutes:

finish by browning under a broiler.
