Oddly enough, I read that post just after I sent the following recipe to another list I'm on. But if you like polenta, here's an easy recipe from a terrific book by Arthur Schwartz called " What to Cook When You Think There's Nothing in the House to Eat. " I've turned to this cookbook many times, but it definitely paid for itself with this microwave polenta recipe. BTW, you don't need to use any special kind of cornmeal; the grocery store version is fine (but I usually use an orgainc, coarse-ground cornmeal). The only trick is to start with cold water. I usually beat in a little butter and Parmesan cheese at the end and serve it topped with tomato sauce and cottage cheese. If I have leftovers, I usually pour it into a 8x8 pan and refrigerate overnight. The next morning I cut it and fry it for breakfast as cornmeal mush (that's what we called it in Ohio, where I grew up). Candace Microwave Polenta Arthur Schwartz, What to Cook Serves 2 1 cup cornmeal 4 cups cold water 1 teaspoon salt Combine the cornmeal and cold water in a 3-quart microwave casserole. Whisk to combine. Microwave on high for 5 minutes. Whisk until smooth. Microwave on high for 5 minutes. Whisk. Microwave on high for 5 minutes. The polenta is now done.
