Guest guest Posted February 21, 2000 Report Share Posted February 21, 2000 Each thin slice has almost 3 grams of fiber. * Exported from MasterCook * Toaster Oat Bread Recipe By : Meatless Gourmet: Easy Lowfat Favorites, Hinman, p 260 Serving Size : 14 Preparation Time :0:00 Categories : Breads, Quick Grains And Cereals Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup whole wheat flour 1 cup all-purpose flour 1 cup oat bran -- uncooked 1 cup rolled oats 1 tablespoon sugar 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 tablespoon lemon juice 2 cups skim milk 1 tablespoon vegetable oil 1 tablespoon honey Makes 14 servings This delicious, high-fiber bread owes its name to the oat flavor that is really enhanced by toasting. It's great with jam or alongside a hearty bowl of soup or stew. Preheat oven to 375F. Lightly oil a 5 x 9-inch loaf pan or spray with a nonstick cooking spray. In a large bowl, combine both types of flour, oat bran, rolled oats, sugar, baking powder, baking soda, and salt. Mix well. In a small bowl, combine lemon juice and milk. Let stand 1 minute. Stir in oil and honey and add to dry mixture, mixing until all ingredients are moistened. Place mixture in prepared pan. Bake 30 to 35 minutes, until top of bread is crusty and brown and a toothpick inserted in the center of the bread comes out clean. Cool in pan on a wire rack for 5 minutes, then turn out onto rack and cool completely before slicing.
