Multigrain Raisin Muffins Oat Bran-Fruit Muffins * Exported from MasterCook * Multigrain Raisin Muffins Recipe By : Meatless Gourmet: Easy Lowfat Favorites, Hinman, p 275 Serving Size : 12 Preparation Time :0:00 Categories : Breads, Quick Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup whole wheat flour 1/4 cup all-purpose flour plus 2 tablespoons all-purpose flour 3/4 cup yellow cornmeal 3/4 cup rolled oats -- uncooked 1/4 cup wheat germ 2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 cup raisins 1 3/4 cups skim milk 1/3 cup firmly packed brown sugar 2 tablespoons vegetable oil 2 egg whites 2 teaspoons vanilla extract Makes 12 muffins These superb, high-fiber muffins are just the right thing to serve with brunch. Serve them hot, pass the jam, and enjoy. Preheat oven to 400F. Lightly oil 12 muffin cups or spray with a nonstick cooking spray. In a large bowl, combine both types of flour, cornmeal, oats, wheat germ, baking powder, baking soda, and cinnamon. Mix well. Stir in raisins. In another bowl, combine remaining ingredients. Beat with a fork or wire whisk until blended. Add to dry mixture, mixing until all ingredients are moistened. Spoon batter into prepared muffin cups. Bake 12 minutes, until a toothpick inserted in the center of a muffin comes out clean. Remove muffins to a wire rack. Serve warm for best flavor.
