Summer Vegetable Bake

Spinach

 

Amount Measure Ingredient -- Preparation Method

8 ounces fresh green beans -- cut into 1-inch pieces

(or one 9-ounce package frozen cut green

beans)

1 medium onion -- chopped

1 10-ounce package frozen chopped spinach

1 tablespoon butter or margarine

1 tablespoon all-purpose flour

1/4 teaspoon salt

1/4 teaspoon garlic powder

Dash ground nutmeg

Dash pepper

2/3 cup milk

1 3-ounce package cream cheese -- cut up

1/2 cup soft bread crumbs

2 tablespoons grated Parmesan cheese

1 tablespoon butter or margarine -- melted

 

* In a large saucepan, bring 1 cup water to boiling. Add fresh green beans

and onion. Cover and simmer for 10 minutes. (For frozen beans, cook onion in

the 1 cup boiling water for 5 minutes; add beans. Cook 5 minutes more.) Add

spinach. Return to boiling. Simmer, covered, for 5 minutes more. Drain well.

* Meanwhile, for sauce, in a small saucepan, melt butter or margarine. Stir

in flour, salt, garlic powder, nutmeg, and pepper. Add milk all at once. Cook

and stir till thickened and bubbly. Add cream cheese. Stir till cheese is

melted. Stir sauce into vegetable mixture. Turn into a 1-quart casserole.

* In a mixing bowl, toss together bread crumbs, cheese, and butter or

margarine. Sprinkle over vegetable mixture. Bake, uncovered, in a 350 degree

oven for 20 to 25 minutes, or till heated through.
