Guest guest Posted February 22, 2000 Report Share Posted February 22, 2000 * Exported from MasterCook * Lima Bean and Potato Stew Recipe By :Easy Vegan Cooking - Leah Leneman Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds potatoes 2 onions 2 tablespoons vegetable oil 1 1/2 cups vegetable stock or water 1 tablespoon finely chopped parsley 1 teaspoon dried sage 2 14 to 16 oz cans lima beans 1 teaspoon miso Cook the potatoes in lightly salted boiluing water until tender (or use leftover cooked potatoes). Drain and chop. Slice the onions thinly. Saute in the oil for a few minutes until lightly browned. Stir in the stock or water, the parsley and the sage. Then stir in the drained beans. Bring to a boil and simmer for 2-3 minutes. Stir in the potatoes and simmer for a further 2-3 minutes. Remove a little of the stock from the saucepan and cream it with the miso in a cup before stirring it into the saucepan.
