Guest guest Posted February 22, 2000 Report Share Posted February 22, 2000 * Exported from MasterCook * Sweet and Sour Tofu and Vegetables Recipe By :Easy Vegan Cooking - Leah Leneman Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound tofu 1 bunch scallions 4 tablespoons vegetable oil 1 pound tomatoes 1 14-16 oz can pineapple chunks in juice 1/4 cup almonds 2 teaspoons cornstach 4 tablespoons soy sauce Cut the tofu into small cubes. Finely chop the scallions. Saute them both in the oil for 3 minutes. Chop the tomatoes and add them to the pan. Cook for 5 minutes. Drain the pineapple and add to the pan together with the whole almonds. Cook for 2-3 minutes. Dissolve the cornstarch in the soy sauce and pour the mixture over the vegetables and tofu.
