Indian Vegetable Scallop

Squash Tomatoes

 

 

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1/4 cup butter or regular margarine

4 small summer squash (zucchini or yellow) -- sliced

4 ears of corn

3 tomatoes -- chopped

1/2 cup chopped onion

1 teaspoon salt

1/4 teaspoon pepper

 

Melt butter in 3-quart saucepan. Add squash, corn, cut from the cob,

tomatoes, onion, salt, and pepper. Cover and cook over low heat, stirring

occasionally, about 30 minutes or until tender.
