Italian Macaroni and Beans

1/4 pound whole wheat macaroni

2 14-16 oz cans chick peas -- drained and rinsed

4 tablespoons extra virgin olive oil

2 to 3 cloves garlic

freshly ground black pepper

nutritional yeast or vegan Pamesan, as

needed

 

Cook the macaroni until just tender and drain. Drain the chick peas.

Heat the oil in a saucepan. Crush the garlic and add it to the pan, stirring

for a minute or two. Add the chick peas and macaroni, and continue stirring.

Season with pepper (if the beans and pasta were cooked in salted water

additional salt should not be needed).

Spoon the mixture into serving dishes, sprinkled with lots of yeast or vegan

Parmesan.
