Tofu " Fried Rice " Wild Rice With Snow Peas And Raspberries * Exported from MasterCook * Tofu " Fried Rice " Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 129 Serving Size : 1 Preparation Time :0:00 Categories : Grains And Cereals Main Dishes, Vegetarian Mirkin's 20/30 Fat & Fiber Rice Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup bouillon -- about 1 onion -- chopped 1 red bell pepper -- chopped 1 jalapeno chili -- minced 1/4 pound mushrooms -- chopped 1 tablespoon minced fresh ginger root 1/2 teaspoon turmeric 4 cups cooked barley -- brown rice mix OR oat groats 12 ounces packaged low-fat tofu cut into 1/2-inch chunks 3 tablespoons soy sauce -- or to taste 1 tablespoon toasted sesame seeds Chopped fresh flat-leaf parsley -- for garnish Bring the bouillon to a boil in a large pot. Add the onion, bell pepper, chili, mushrooms and ginger. Cook, stirring frequently, until softened, about 5 minutes, adding more bouillon if needed. Add the cooked whole grains, tofu, soy sauce and sesame seeds and cook over medium heat, breaking up the tofu a little so it has the consistency of scrambled eggs. Serve garnished with parsley. Yield: 6 to 8 servings, calories: 200, fat: 2g, fiber: 9g. Combine the bouillon, curry powder and green onions in a pot and bring to a boil. Stir in the water chestnuts and wild rice and heat through. Add the snow peas, cover and cook 2 to 3 minutes or until just crisp-tender. Transfer the mixture to a serving dish and stir the raspberries in gently, reserving a few to garnish the top.
