Lower the heat to medium and cook 25 to 30 minutes, or until the potatoes are fork-tender. Drain. Meanwhile, heat the butter, chevre, and 1/2 cup half-and-half until the cheese melts. Add the butter mixture to the drained potatoes and mash them until they are smooth, adding more warmed half-and-half in a thinner mixture is desired.
