Mashed Potatoes with Chevre

Amount Measure Ingredient -- Preparation Method

3 pounds potatoes -- peeled and quartered

1/4 cup (1/2 stick) butter -- at room temperature

7 ounces fresh chevre -- cut into thick slices, at room

temperature

1/2 to 3/4 cup half-and-half

Salt and white pepper -- to taste

Ground nutmeg -- for garnish, optional

 

In a large saucepan, cover the potatoes with cold water, cover, and

bring to a boil. Lower the heat to medium and cook 25 to 30 minutes, or until

the potatoes are fork-tender. Drain.

Meanwhile, heat the butter, chevre, and 1/2 cup half-and-half until the

cheese melts. Add the butter mixture to the drained potatoes and mash them

until they are smooth, adding more warmed half-and-half in a thinner mixture

is desired. Season with salt and pepper, transfer to a serving bowl, and

sprinkle nutmeg lightly over the top of the potatoes.
