Guest guest Posted February 24, 2000 Report Share Posted February 24, 2000 * Exported from MasterCook * Chick Pea Stroganoff Recipe By :Easy Vegan Cooking - Leah Leneman Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 onion 4 cups mushrooms 2 tablespoons vegan margarine 4 tablespoons vegetable stock OR water 1/4 teaspoon freshly ground nutmeg 1 teaspoon soy sauce 1/4 teaspoon mustard powder 2 14-16 oz cans chick peas -- drained and rinsed 2 teaspoons cider vinegar OR wine vinegar 10 ounces whole wheat noodles 3/4 cup soy yogurt Chop the onion and mushrooms. Melt the margarine and saute the vegetables until soft. Add the stock, seasonings, chick peas, and vinegar. Cover and simmer on low heat for about 10 minutes. Meanwhile, cook the noodles for 10-15 minutes until soft. Add the yogurt to the chick peas mixture over the lowest possible heat, stirring constantly with out bringing to a boil, until heated through.
