Chick Pea Stroganoff

1 onion

4 cups mushrooms

2 tablespoons vegan margarine

4 tablespoons vegetable stock OR water

1/4 teaspoon freshly ground nutmeg

1 teaspoon soy sauce

1/4 teaspoon mustard powder

2 14-16 oz cans chick peas -- drained and rinsed

2 teaspoons cider vinegar OR wine vinegar

10 ounces whole wheat noodles

3/4 cup soy yogurt

 

Chop the onion and mushrooms. Melt the margarine and saute the vegetables until

soft.

Add the stock, seasonings, chick peas, and vinegar. Cover and simmer on low

heat for about 10 minutes.

Meanwhile, cook the noodles for 10-15 minutes until soft.

Add the yogurt to the chick peas mixture over the lowest possible heat, stirring

constantly with out bringing to a boil, until heated through.

Serve over the cooked noodles.
