Jenn Ottawa, Ontario, Canada http://tlotc.dhs.org/jenn/ * Exported from MasterCook * TOMATO SOUP WITH ORZO AND BASIL Recipe By : Cory grammaco Serving Size : 2 Preparation Time :0:00 Categories : 6 Point Done By Dotties Calculator Meatless Dishes Pasta Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons olive oil 1 small onion -- finely chopped 1 garlic clove -- finely chopped 10 ounces tomato soup, condensed -- preffer low sodium 10 ounces water 1 large tomato -- seeded and chopped 1/4 cup pasta shells -- Orzo or any other tiny pasta 1/4 cup Parmesan cheese -- grated 2 tablespoons basil leaves -- slivered Heat oil in a saucepan over medium-high heat. Add onions and saute until they begin to color, 2 to 3 minutes. Add garlic and cook for 1minute more. Add soup, tomatoes, orzo and water. Over medium-high heat, bring to a boil. Reduce heat to low and simmer, covered, until the orzo is tender, about 10 minutes, stirring occasionally to prevent the orzo from sticking. Ladle into soup bowls and garnish with cheese and basil. Makes 2 servings NOTE:When there is next to nothing in the refrigerator, canned soup in the cupboard provides a satisfying last resort. A few ordinary ingredients will change a predictable soup into an unexpected delight. Here, chopped tomatoes, fresh basil and Parmesan cheese update a pop art icon.
