Oven Fried Zucchini

Amount Measure Ingredient -- Preparation Method

vegetable spray

3 tablespoons herb seasoned bread crumbs

1 tablespoon grated parmesan cheese

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/8 teaspoon ground black pepper

2 medium zucchini

2 teaspoons vegetable oil

2 tablespoons water

 

Preheat the oven to 475 degrees.

 

Spray a cookie sheet liberally with spary.

 

Combine crumbs, cheese, salt and pepper on a sheet of wax paper.

 

quarter the zucchini lengthwise, then cut each spear in half or thirds. Put

into a plastic bag; add the oil and water. Chose the bag and shake so that the

spears are lightly coated.

 

Roll each spear in the crumb mixture until it is lightly coated. Arrange the

spears on the prepared sheet in a single layer. Bake uncovered for 7 mintues or

until the spears are browned and tender-crunchy.
