Someone asked me to figure out the points for this recipe here it is 0.9 points

per muffin or 0.74 points per muffin if you use egg whites.

Amount Measure Ingredient -- Preparation Method

1 cup zucchini -- grated

1/2 cup grated carrots

1/2 teaspoon baking soda

2 eggs

1 teaspoon vanilla

6 tablespoons flour

1 teaspoon baking powder

4 tablespoons raisins

2/3 cup skim milk

10 packets sweet and low

 

Mix all ingredients. Spray muffin pan with Pam. Divide equally. Bake at 350 for

25 minutes. Makes 12 muffins.
