Guest guest Posted February 27, 2000 Report Share Posted February 27, 2000 Here's another late one. * Exported from MasterCook Mac * Greek-Style Tofu Salad Recipe By : Vegetarian Times Cooks Mediterranean Serving Size : 6 Preparation Time :0:00 Categories : Soyfoods Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup red wine vinegar 2 tablespoons olive oil 1 tablespoon sliced fresh basil leaves 1 teaspoon kosher or regular salt 1/2 teaspoon freshly ground black pepper 1/2 teaspoon dried oregano 1 pound extra-firm tofu -- drained and cut into 1/2-inch cubes 2 medium cucumbers -- peeled and sliced 1 small red onion -- thinly sliced 1 cup good-quality black olives -- pitted 1/4 cup crumbled feta cheese Makes 6 servings Preparation time: 15 minutes In a large bowl, combine the vinegar, olive oil, basil, salt, pepper and oregano and whisk until slightly thick. Add the tofu cubes and marinate for 1 hour, stirring occasionally.
