Italian Tofu and Spinach Patties

1 package prewashed -- (10 ounces)

ready-to-eat spinach

1 pound soft tofu -- crumbled

1 cup grated smoked mozzarella cheese

1/4 cup freshly grated Parmesan cheese

2 garlic cloves -- minced

Salt to taste

1/4 teaspoon freshly ground black pepper

1/4 teaspoon ground nutmeg

2 cups dry bread crumbs

3 tablespoons olive oil

2 cups Mediterranean Tomato Sauce -- (see recipe)

- warmed

 

Makes 8 servings

Preparation time: 20 minutes

Cooking time: 20 minutes

 

Rinse spinach, shake off excess water and wilt in a large saucepan

over high heat. Remove from pot and drain thoroughly. Chop coarsely.

 

In a large bowl, mix the tofu, spinach, cheese, garlic, salt, pepper

and nutmeg. Shape the mixture into 8 equal-size patties. Dip each

patty in bread crumbs.

 

In a medium skillet, heat the olive oil over medium heat. Cook the

patties until golden, 3 to 4 minutes per side. Serve in pool of

Per patty with 1/4 cup sauce: 230 calories, 11 grams protein, 17

grams fat (percent calories from fat, 66), 11 grams carbohydrates, 13

milligrams cholesterol, 292 milligrams sodium, 3 grams fiber.
