Guest guest Posted February 25, 2000 Report Share Posted February 25, 2000 From Feeding the Healthy Vegetarian Family: Great Gravy Our Favorite Tahini Dressing * Exported from MasterCook * Great Gravy Recipe By :Feeding the Healthy Vegetarian Family, Ken Haedrich Serving Size : 0 Preparation Time :0:00 Categories : Feeding the Healthy Veg Family Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 1 cup finely chopped onion 1 clove garlic -- minced 3 tablespoons nutritional yeast 1/4 cup unbleached flour 3 cups water 1/2 teaspoon salt 1/2 teaspoon dried thyme -- (optional) freshly ground black pepper Heat the olive oil in a large skillet. Stir in the onion and saute over medium-high heat for 6 to 7 minutes. Stir in the garlic and saute a few seconds more. Sprinkle with nutritional yeast over the onions, stirring it for 30 seconds. Sprinkle the flour into the pan and brown it, stirring, for 30 seconds more. Stir in about half the water, whisking vigorously, then gradually add the rest of the water. Bring the gravy to a boil, stirring in the salt and thyme. Boil the gravy gently for about 5 minutes. If you are using it right away and would like it thicker, simmer several minutes more. Don't cook it any more than 5 minutes if you're making the Vegan Scalloped Spuds. Add pepper to taste and serve hot. Source: " Typed by Karen C. The correct consistency of the dressing is like heavy cream, perhaps a tad thicker. You can thin it, if necessary, with a little water or thicken it with an additional spoonful or two of tahini.
