Ellen * Exported from MasterCook Mac * Not Really Chicken Salad Recipe By : AJC 2/24/00 Deborah Geering Serving Size : 4 Preparation Time :0:00 Categories : Soyfoods Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound firm tofu -- frozen thawed - pressed to remove excess moisture and diced - or 2 cups diced smoked tofu 1/2 cup diced celery 2 tablespoons minced onion 1/4 cup garlic toasted almonds -- (see note) 3/4 cup mayonnaise or soy-based substitute 2 tablespoons honey 1 tablespoon raspberry vinegar 1/4 cup crushed pineapple Makes 4 servings Thawing time: overnight Preparation time: 15 minutes Cooking time: 3-5 minutes Combine all ingredients. Add salt and pepper to taste. Note: To make garlic toasted almonds, place 1/4 cup slivered or chopped almonds, 1 clove finely minced garlic and 1/8 teaspoon salt in a frying pan. Do not add oil. Heat over low heat, stirring frequently, until the almonds turn light brown, about 3-5 minutes. Per serving: 482 calories, 11 grams protein, 43 grams fat (percent calories from fat, 80), 18 grams carbohydrates, 25 milligrams cholesterol, 260 milligrams sodium, 3 grams fiber. - - - - - - - - - - - - - - - - - - Per serving (excluding unknown items): 211 Calories; 10g Fat (39% calories from fat); 18g Protein; 17g Carbohydrate; 0mg Cholesterol; 30mg Sodium Food Exchanges: 2 1/2 Lean Meat; 1/2 Fat; 1 Other Carbohydrates NOTES : It's been a long time since I've eaten chicken, but to me this tastes like the real thing. Freezing and thawing tofu --- and then pressing out the excess moisture between several layers of paper towels gives it a " meatier " texture. Baked, smoked or roasted tofu, available in the refrigerated section of many health food stores, also tastes somewhat " chickeny.
