Guest guest Posted February 28, 2000 Report Share Posted February 28, 2000 * Exported from MasterCook * Vegetable Tofu Stir-Fry Recipe By :The Natural Estrogen Diet - Dr. Lana Liew Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon vegetable oil 1 teaspoon peeled minced ginger 1 clove garlic -- minced 14 ounces extra-firm tofu -- drained and cut into 3/4-inch cubes 1 cup broccoli florets 1 small red bell pepper -- diced 1 large carrot -- grated 1/4 cup sliced water chestnuts 1 tablespoon light soy sauce 1 tablespoon vegetarian oyster sauce 1 teaspoon salt 1/8 teaspoon pepper Heat oil in a non-stick skillet over medium heat. Add ginger and garlic and saute 1 minute. Add tofu and saute until lightly browned, 3 to 5 minutes. Add remaining vegetables and saute 2 minutes. Add soy sauce, oyster sauce, salt, and pepper; saute and gently stir to heat.
