Guest guest Posted February 29, 2000 Report Share Posted February 29, 2000 * Exported from MasterCook * Linguine with Roasted Plum Tomatoes and Fresh Herbs Recipe By :Pasta Verde, Judith Barrett Serving Size : 6 Preparation Time :0:00 Categories : Pasta Verde Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 cup olive oil -- plus 2 tablespoons 3 pounds plum tomatoes -- seeded, cored, and cut into 1 " pieces 3 tablespoons chopped fresh parsley 2 tablespoons chopped fresh oregano 1 tablespoon chopped fresh basil 2 cloves garlic -- pressed or finely minced 1 tablespoon kosher salt -- plus extra for seasoning 1 pound dry linguine freshly grated Parmigiano-Reggiano cheese -- (optional) Preheat the oven to 450°F. Pour 1/3 cup of the oil into a large roasting pan and add the tomatoes, herbs, and garlic. Stir well to coat the tomatoes with the oil; spread them in an even layer in the pan, and sprinkle with salt to taste. Roast in the oven, stirring every 10 minutes, on the topmost rack until the tomatoes are beginning to turn brown, 20-25 minutes. Remove from the oven and set aside. While the tomatoes are roasting, bring a large pot of water to a rolling boil over high heat. Add the tablespoon of salt and the linguine. Cook until the linguine is tender but firm, al dente, about 7-10 minutes. Drain; transfer to a large preheated serving bowl. Pour the roasted tomatoes over the pasta. Add the remaining olive oil; toss well. Serve with Parmigiano-Reggiano cheese if desired.
