Guest guest Posted March 1, 2000 Report Share Posted March 1, 2000 If you use brown rice syrup instead of honey, this would be vegan- * Exported from MasterCook * Bananas Foster French Toast Recipe By :The Soy Gourmet - Robin Robertson Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup vanilla soy milk 1/2 cup soft silken tofu 3 ripe bananas -- peeled and sliced 1/8 teaspoon nutmeg 8 slices French bread -- cut diagonally 2 tablespoons soy margarine 1 tablespoon honey OR brown sugar 2 tablespoons dark rum OR 1 teaspoon rum extract Combine the soy milk, tofu, 1 sliced banana, and the nutmeg in a food processor or blender and process until smooth and well combined. Pour into a large shallow bowl. Place the bread in thee mixture and allow it to soak into the bread, coating both sides. Heat a lightly oiled skillet over medium-high heat. Add the prepared bread and cook until just browned on each side. Remove the French toast from the skillet and keep it warm in the oven. Meanwhile, combine the margarine and honey in a skillet over medium-high heat anf stir until bubbly. Add the remaining banana slices, then carefully add the rum (or extract).
