Guest guest Posted March 1, 2000 Report Share Posted March 1, 2000 * Exported from MasterCook * Quinoa Italiano Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup quinoa 2 teaspoons olive oil 1/2 cup chopped onions 1 cup marinara sauce -- divided 1 cup water 1/2 teaspoon dried oregano 1/8 teaspoon salt or to taste 1/8 teaspoon freshly ground pepper Place quinoa in a large bowl; fill bowl with cool water and then drain into strainer. Repeat four more times or until water no longer looks soapy. In a 2-quart saucepan, heat the oil over medium-high heat. Add onions, and cook, stirring, until onions are softened, about 1 to 2 minutes. Add 3/4 cup of sauce and the water; bring to a boil. Stir in the quinoa and oregano; return to a boil. Reduce heat and simmer, covered, 20 minutes. Remove from heat; stir in remaining 1/4 cup of sauce, salt & pepper.
