Angel Hair Pasta in Broth with Fresh Herbs

Amount Measure Ingredient -- Preparation Method

1 tablespoon kosher salt

1 pound dry angel hair spaghetti

6 cups broth

1 tablespoon fresh marjoram leaves

1 tablespoon chopped fresh parsley

1 bunch fresh chives -- snipped into 2 " pieces

fresh grated Parmesan cheese -- (optional)

 

Bring a large pot of water to a rolling boil over high heat. Add the salt

and angel hair pasta. Cook, stirring, until the pasta is tender but firm,

al dente, 5-7 minutes. Drain.

 

In a large saucepan, heat the broth over medium heat until simmering. When

the pasta is ready, add the marjoram and parsley. Ladle the broth into

individual serving bowls. Place a portion of the pasta in the center of

each bowl. Garnish with chives. Serve with Parmesan cheese if desired.
