I bought a bag of avocados at Costco then wandered over to the

http://www.avocado.org/ site and grabbed a few of their recipes. There is the

occasional chicken reference here, and if you're like me, when you see chicken

broth/stock you actually read McKay's Chicken Seasoning.

A Delicious Guacamole Recipe

Amount Measure Ingredient -- Preparation Method

1 tablespoon salt

8 tomatillo's

1/2 cup coarsely chopped cilantro

1/2 cup minced onion

2 jalapeno's minced finely

4 California avocado's -- pitted and peeled

salt

pepper

 

Over medium heat, bring 2 quarts of water to boil. Stir in salt and add husked

tomatillo's. Cook for 10 minutes. Remove tomatillo's from water and puree in

blender. Set aside. In medium mixing bowl, coarsely mash the avocado's. Stir in

cooled puree and rest of ingredients. Adjust seasoning with salt and pepper.

Cover tightly with plastic wrap until ready to serve.

Avocado and Mushroom Salad

Amount Measure Ingredient -- Preparation Method

1/8 cup olive oil

1/4 cup whole grain mustard

1/2 cup sherry wine vinegar

1/2 cup chopped fresh basil leaves

12 oz each -- diced green and red

bell pepper

1 lb fresh white mushrooms

1 whole California avocado

6 leaves of Butterhead lettuce

12 slices Italian bread

 

In a large bowl, mix oil, mustard, vinegar, basil and bell peppers. Set aside.

Wash mushroom and slice. Add to the dressing mixture and marinate for 10

minutes.

Serve each salad potion on a leaf of lettuce.

Fan sliced California avocado on top and serve with two slices of grilled

Italian bread

Amount Measure Ingredient -- Preparation Method

1/2 jar mango slices -- (26-ounce) chopped *

1 can sliced ripe olives -- (2.25-ounce)

drained and chopped

1 small purple onion -- diced

1/4 cup minced fresh cilantro

1/3 cup fresh lime juice

2 tablespoons balsamic vinegar

2 tablespoons honey

2 tablespoons olive oil

1 tablespoon chili garlic sauce

1/2 teaspoon salt

1/2 teaspoon dried crushed red pepper

4 small CALIFORNIA AVOCADOS -- peeled and chopped

* 2 large fresh mango -- peeled and diced,

may be substituted

 

Stir together first 11 ingredients in a large bowl.

Gently stir in avocado.

Cover and chill 1 hour.

Serve with sweet potato chips or tortilla chips.

Makes about 5 cups.

Amount Measure Ingredient -- Preparation Method

----Dressing---

1/4 cup olive oil

2 tablespoons raspberry vinegar

2 tablespoons chopped walnuts -- toasted

1 teaspoon grated lime peel

1 tablespoon fresh lime juice

1 tablespoon chopped fresh basil leaves

1/2 teaspoon dry mustard

1/4 teaspoon salt

1/4 teaspoon ground black pepper

----Salad----

10 cups mixed baby greens (10 ounces)

3 kiwi -- peeled, cut in half

lengthwise and sliced in half rounds

2 red or pink grapefruit -- peeled and segmented

2 cups sliced strawberries

1 ripe California avocado -- seeded, peeled,

one-half sliced into 8 portions,

remaining avocado cubed

 

Dressing:

In a small bowl, whisk together ingredients, set aside.

 

Salad

In large salad bowl, combine all ingredients for salad except avocado slices.

Whisk together dressing and pour over salad just before serving.

Toss salad to coat with dressing.

Arrange avocado slices on top.

Serve.

Avocado Grits Timbales with Black Bean Salsa

Amount Measure Ingredient -- Preparation Method

----Grits Timbales----

3 cups chicken broth

3/4 cup uncooked regular grits

1 teaspoon salt

2 garlic cloves -- pressed

1 egg yolk

1 CALIFORNIA AVOCADO -- peeled and chopped

----Black Bean Salsa----

2 CALIFORNIA AVOCADOS -- peeled and chopped

1 can black beans -- (16-ounce) rinsed

and drained

1 cup salsa

1 tablespoon chopped fresh cilantro

2 tablespoons REALIME Lime Juice From Concentrate

1/2 teaspoon ground cumin

 

Grits Timbales

Bring chicken broth to a boil in a medium saucepan over medium-high heat.

Stir in grits and salt.

Cook according to package directions.

Remove from heat, and stir in garlic.

Stir one-fourth of hot mixture into egg yolk; stir into remaining hot mixture.

Stir in chopped avocado.

Spoon mixture into 6 lightly greased 6-ounce custard cups.

Place in a large pan; pour hot water to a depth of 1 inch in pan.

Bake at 350° for 35 minutes or until firmly set.

Remove custard cups from water, and place on a wire rack.

Let stand 10 minutes.

Unmold and serve immediately with Black Bean Salsa.

 

Black Bean Salsa

Stir together all ingredients.

Cover and chill, if desired
