California Confetti Pizza

Amount Measure Ingredient -- Preparation Method

1 California avocado -- diced

1 twelve-inch purchased -- baked pizza bread

shell

1 tablespoon olive oil (+ as needed)

6 cloves garlic -- chopped finely

1/2 cup corn kernels -- fresh or canned

1/2 cup tomatillo or tomato salsa

1/2 cup thinly sliced green onion

1/4 cup chopped Anaheim chile

1/4 cup chopped red bell pepper

1 cup Feta cheese -- (4 ounces)

1 tablespoon chopped -- fresh oregano, or 1

teaspoon dried

 

Gently toss avocado with lemon juice. Reserve.

Brush pizza bread shell with olive oil. Sprinkle with garlic. S

pread salsa over shell.

Sprinkle with corn, green onion, Anaheim chile, bell pepper, avocado, cheese and

oregano.

Drizzle with 1 tablespoon olive oil.

Bake at 450 degrees F until cheese is lightly browned, about 10 minutes.

California Spinach Salad

3 lbs Fresh spinach -- washed and dried

thoroughly

5 Ripe Medium California Avocados -- seeded, peeled and

cubed

2 tbsp Lime or lemon juice

1 cup Ripe olives -- thinly sliced

1 Red onion -- thinly sliced

2 cups Mandarin oranges -- drained and

quartered

Spinach salad dressing (recipe follows)

----Spinach Salad Dressing----

1/2 cup Red wine vinegar

1 tsp Dry leaf tarragon -- crushed

1 tsp Dijon-style mustard

2 cups Vegetable oil

Salt and pepper to taste

 

Tear spinach into bite size pieces and place in large mixing bowl.

In medium bowl, generously drizzle lime juice over avocado cubes before tossing

in salad to prevent browning and to enhance flavor.

Add avocados, olives, onions and oranges to mixing bowl and toss together with

salad dressing.

 

Dressing Preparation:

In small saucepan, bring vinegar and tarragon to a boil. Cool.

Blend mustard and vinegar mixture in deep bowl. Stir well.

Gradually add oil, beating until well blended.

Season to taste with salt and pepper.

California Tomato Pasta

Amount Measure Ingredient -- Preparation Method

3 large ripe California avocados -- pitted and scooped

from peel.

3 tbsp freshly squeezed lime or lemon juice.

3/4 cup finely chopped red onion

3 cups peeled -- seeded, drained,

and chopped ripe tomato

2 cups chopped fresh basil

Salt

Freshly ground black pepper

1 lb linguini or other dried pasta

Fresh basil sprigs for garnish

Freshly grated Parmesan cheese -- preferably

Parmiiano-Reggiano, for passing.

 

In a large pot, bring 4 quarts water to a boil over high heat.

Meanwhile, in a mixing bowl, mash the avocado.

Stir in the lime or lemon juice, onion, tomato, chopped basil, and salt and

pepper to taste. Set aside.

When the water boils, stir in 1 tablespoon salt, add the pasta, and cook until

tender but still firm to the bite. Drain and transfer to a preheated bowl.

Quickly stir in the reserved avocado mixture.

Garnish with basil sprigs and serve immediately.

Pass the cheese at the table.

Carmelized Onion-Avocado Pizza

Amount Measure Ingredient -- Preparation Method

2 tablespoons LAND O LAKES Butter

1 large onion -- cut in half and

sliced

3 CALIFORNIA AVOCADOS -- peeled and sliced

1 package cream cheese -- (3-ounce) softened

1/4 teaspoon salt

1/2 teaspoon freshly ground pepper

1 pizza crust -- (12-inch)

1 small red bell pepper -- thinly sliced

1 small yellow bell pepper -- thinly sliced

1/2 cup sliced kalamata olives

1 cup shredded provolone cheese -- (4 ounces)

 

Melt butter in a large skillet over medium heat.

Add sliced onion, and cook, stirring occasionally, 20 minutes or until onion is

caramel colored.

Process 1 sliced avocado and next 3 ingredients in a food processor until

smooth, stopping to scrape down sides; spread over pizza crust.

Top with onion, remaining avocado, bell peppers, olives, and cheese.

Bake at 400° for 15 minutes

Chilled Yellow Pepper Cilantro Soup, Mango Avocado Tartar

Amount Measure Ingredient -- Preparation Method

2 Yellow peppers-remove green stem and seeds

2 Shallots-roughly chopped

1 Garlic Clove-roughly chopped

1 Tbsp. Olive Oil

2 Yellow Peppers-deseeded and chopped

1 oz. Sherry Vinegar

1 cup Chicken Stock or broth

Salt and Pepper to taste

1 pinch Cilantro -- Chiffonade

----Mango Avocado Tartar----

1/2 Mango-peeled -- deseeded and diced

1/4 Red Bell Pepper- diced

1/2 California Avocado- peeled and diced

1/4 Red Onion- diced

1/8 English Cucumber-deseeded and diced

2 Tbsp. Extra Virgin Olive Oil

Salt and White Pepper to taste

 

After removing the seeds and stems from the peppers, place the chopped shallots

and garlic inside the peppers.

Rub the outside of the peppers with olive oil, and season with salt and pepper.

Place in an oven-proof baking dish and cover with foil.

Roast the peppers at 350° for 45 minutes.

Add the rest of the ingredients except cilantro into a blender.

When roasted peppers are finished, add them to the blender, and blend

thoroughly.

Strain through a fine chinoise.

Adjust seasoning and place in refrigerator until completely chilled.

At time of service, use chilled soup bowls, and place tartar mixture in bottom

of bowl.

Ladel 6 oz. of soup over the top of the tartar mixture and garnish with cilantro

chiffonade.

 

Mango Avocado Tartar

Mix all ingredients together.

Season and reserve in the refrigerator until service
